Some of our new favorite recipes that we've discovered:
Coconut Macaroons
Surprisingly simple and the perfect treat to take to a party
Ingredients:
3/4 cup large egg whites (5 eggs)
2/3 cup granulated sugar
1 (10 oz) bag sweetened coconut flakes
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
a pinch of salt
Pre-heat oven to 330. In large saucepan combine egg whites, sugar and coconut flakes. Cook over medium-low heat, stirring frequently, until all ingredients combine together, about 10-12 minutes (mine didn't take near that long though). The mixture should be sticky and moist, not dry. Remove from heat and stir in salt, almond and vanilla extracts. Set aside on a dish and let cool in the refrigerator for about 30 minutes.
Scoop tightly packed tablespoonfuls of the cooled mixture onto a lined baking sheet. Bake about 27-30 minutes or until golden brown. (makes 20)

Perfect Pumpkin Dip
Super easy and a real crowd pleaser
Ingredients:
1 large container of Cool Whip
1 small package of instant vanilla pudding (don't make my mistake! Be sure its the instant package and not the cook and serve!)
1 15oz can of Libby's Pumpkin
1 teaspoon of pumpkin pie spice
Mix all of the ingredients together in a large bowl and enjoy with Nilla Wafers!
Mini Apple Popovers
These were a huge hit at the baby shower and really simple to make right before guests arrive!
Ingredients:
1 apple...I used granny smith 
1 can of crescent rolls
Melted butter
Cinnamon and sugar mix
-Melt the butter
-Open the crescent rolls and brush with the melted butter
-Sprinkle the cinnamon sugar mix over the rolls
-Cut apple, place on piece on each roll and roll apple into crescent roll
-Sprinkle extra cinnamon sugar mix over tops of rolls
-Bake for 11 minutes at 350
   Crescent rolls, brush with melted butter sprinkle with cinnamon sugar, fill with apple slices and bake OMG!      

Super easy and yummy chicken (this has become a dinner favorite in our house)
 About 3 1/2 pounds chicken (I've used both thighs and breasts)
1 ( .7 ounce) packet of dried Italian dressing mix (such as Good Seasonings)
1/2 cup brown sugar, packed

Preheat your oven to 350 degrees Fahrenheit. Grease a 12 inch x 9 inch pan and set aside, and/or it may be preferable to line your dish with aluminum foil as the sugar tends to caramelize while baking.

Rinse chicken, pat dry with paper towels.

Combine and the dried Italian seasoning mix and the brown sugar, mixing together well.

Dip and press the chicken pieces into the mixture, coating front and back and place into your prepared pan, topside of the chicken facing up. Any extra coating that remains can just be sprinkled over the chicken.

Cook for 50-60 minutes (until chicken is done) and enjoy!! 

Mike's Weekend Pancake Recipe
(makes about 8 pancakes)
1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
3 tablespoons butter, melted
1 egg
1 1/4 cups milk
cooking spray
1 teaspoon vanilla extract
1. Combine flour, baking powder, salt and sugar in a large bowl.
2. Whisk in melted butter, egg, vanilla extract and milk until combined. Let batter rest for 5 minutes.
3. Preheat a large skillet over medium heat. Spray with cooking spray. Pour batter into hot skillet, about 1/3 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.     
Enjoy!
